Curricular Structure

The DGCA program consists of five main components:

  • Business Courses: English for Culinary Arts and Material Management.
  • Core Courses: Kitchen Administration, Food Production, Food & Beverage Services, Food Science, Hygiene, and Ice/Vegetable Carving.
  • Optional Courses: Specialized training in ice/vegetable carving or kitchen stewarding.
  • Industry Visits and Project Work: Practical exposure to operational aspects of kitchen management in hotels and restaurants.
  • Internship and Report Writing: A 6-month internship in a star hotel or resort, bridging classroom learning with real-world application.

Internship Opportunities

Internship forms a crucial part of the DGCA program, offering 6 months of hands-on training in top-tier hotels and resorts in Nepal or abroad. This experience allows students to:

Culinary Arts Practical Details

  • Total Practical Hours: 1600 hours, split between classroom learning and industry training.
